What does the environment have to do with our food choices? Imagine the effect of 20 billion livestock stomping around the planet. Civilizations before us—Roman, Greek, Arab, African, and Indus Valley to name a few—all put great emphasis on livestock agriculture with considerable social and economic consequences due to overgrazing, deforestation and soil erosion.
We focus on recycling, car-pooling, and low-flow toilets to help the environment. They are all nice gestures, however excluding meat from our diets would do more to benefit our living environment—water, soil, energy, forests, and food—than any other action. In essence, our environment’s health—like our health—is greatly dependent on what we choose to eat.
Remember, it’s not the environment, it’s our environment.
