Digestion begins in the mouth with the teeth and ends in the end—in the colon. In between, the jaw, saliva, esophagus, stomach, pancreas, small intestine, and appendix also work as part of the digestive system to break down the foods we eat providing fuel and nutrients to sustain the bodies’ 100 trillion cells. If that isn’t a challenge and a half, then what is?
First off, even if there wasn’t one shred of evidence shedding light on what foods our digestive system was meant to process, we would have to question our meat-centered diet when we observe the attributes of known carnivores. Their digestive system is virtually the opposite of humans.
From the observable parts, to the scientific processes, to the byproducts of the processes—health or disease—we have evidence and plenty of it. Pull up a chair, put a napkin in your lap, chew on the information, and digest the facts. What should come out the other end will be a conclusion that we can live with.
